Healthy Cod Fish & Spinach Soup Recipe
Ingredients:
Cooking oil
200g cod fish
2 handfuls spinach
Egg toufu
Gojiberries
Garnish with seaweed
Soup base:
50g dried anchovies
3 dried mushrooms
400ml water
6 to 8 Red dates
Directions:
- Pan sear the cod fish a minute for an extra crispy crust. Transfer out and add in the anchovies and mushrooms.
- Gently toss it until it’s aromatic. Add water and red dates, then bring to boil for 15 to 20 minutes with low heat.
- Discard the anchovies and mushrooms. Add the spinach, egg toufu, and cod fish. Bring to boil.
- Lastly, add gojiberries and off the heat.
- Scoop to a serving bowl and garnish with seaweed before serve.
